Entrees
Lasagna – seasoned ground turkey layered with
fresh pasta, red sauce, and cheeses. Almond Chicken
– wild and long grain rice, chicken, and a creamy
mushroom sauce covered with toasted almonds. Rotel Chicken
– egg noodles, lots of cheese, rotel tomatoes with
chicken. Chicken Mornay – wild and long
grain rice, chicken breasts, broccoli, and a creamy mornay
sauce. Southwest Chicken – white rice covered with black
bean chili & a sauteed chicken breast, topped with tomatoes and
cheese. Shepherd’s Pie – carrots, mushrooms, and other
assorted vegetables with ground turkey and a tomato sauce topped with
mashed potatoes. Aztec Chicken – spanish rice
with a sauteed chicken breast and black bean chili, a slice of tomato and
cheese, topped with pico de gallo. Black Bean
Enchiladas – corn tortillas stuffed with brazilia black beans,
covered with cheddar cheese and garnished with pico de gallo.
Eggplant Parmesan – breaded and sauteed slices of
eggplant with homemade red sauce and cheeses. Manicotti
– fresh pasta tubes stuffed with a mixture of spinach and three
cheeses, served with fresh tomato sauce. Chicken
Enchilada Casserole – shredded chicken and a fresh tomato and
green chile cream sauce over a layer of corn tortillas and topped with
